Empire’s Treasure® Blackened Mahi Salad
Directions
- Spray mahi on both sides with canola pan spray. Coat fish on both sides with Cajun seasoning.
- Warm griddle or sauté pan over medium heat. Spray with canola pan spray then place mahi in pan and cook for 2-3 minutes per side. Remove from pan and hold for plating.
- Toss greens in bowl with dressing and place in center of entrée plate.
- Carefully place blackened mahi on top of greens.
- Arrange bell pepper, orange, cucumber, almonds, grapes, carrots, and boiled eggs around plate then serve.

- 1 8 oz. filet ea. Empire's Treasure® Mahi Mahi Fillet(s)
- 2 tbsp Magellan® Cajun seasoning
- 1 ea. Brilliance Pan Spray, pan spray
- 2 to 3 cups Peak Fresh Produce® Arcadian Blend Salad Greens
- 1/4 ea. Peak Fresh Produce® Cucumber(s), sliced on bias
- 1/4 ea. Peak Fresh Produce® Pepper(s), Green Bell, julienne
- 1 ea. Peak Fresh Produce® Orange(s), supreme cut
- 1/2 ea. Peak Fresh Produce® Carrot(s), peeled and grated
- 1 ea. Nature's Best Dairy® Egg(s), boiled, peeled, and cut into quarters
- 2 tbsp Magellan® Almonds, Sliced, roasted
- 4 ea. Peak Fresh Produce® Grapes, Red Seedless, cut in half
- 2 1/2 oz. Piancone® Roasted Red Pepper Dressing
