Natures Best Dairy® Goat Cheese Ice Cream
Directions
- Make a goat cheese cream: thoroughly combine 4 T. of the heavy cream with the goat cheese, half of the granulated sugar, and the corn syrup.
- To make the ice cream. Prepare an ice water bath. Bring the remaining cream and milk to a boil. Whisk together the egg yolks with the remaining sugar. Slowly pour in 2 tsp. of the hot cream to temper the egg mixture. Then, pour the egg mixture into the cream-milk mixture and continue to cook for 2-3 minutes, or until the mixture coats the back of a spoon.
- Add the goat cheese cream into the mixture and whisk until smooth. Strain through a fine-mesh sieve and chill over the ice water bath.
- Freeze in an ice cream machine. Keep frozen until ready to serve.

- 4 cups Nature's Best Dairy® Cream, Heavy
- 1 cup Nature's Best Dairy® Milk, Whole
- 8 ea Nature's Best Dairy® Egg(s), yolks only
- 1/2 cup West Creek® sugar
- 6 tbsp West Creek® corn syrup
- 8 oz Nature's Best Dairy® Cheese, Goat, log
Spicy Fig Sauce
Directions
- Cook the sugar in a heavy-bottomed sauté pan over medium heat for 3 minutes, or until golden brown. Add the orange juice and bring to a boil. Add the figs, star anise, and peppercorns, bring to a boil, and cook for 3 minutes.
- Remove from the heat and strain through a fine mesh sieve, pushing on the solids to remove some of the liquid.

- 1 1/2 cup fig(s), fresh, chopped
- 6 ea Magellan® Star Anise
