Pork Loin Chops with Chipotle Glaze
Directions
- In a saucepan over medium heat add beer, garlic and onion. Simmer for 2-3 minutes.
- Now whisk in chipotle puree, brown sugar, ketchup, vinegar, and honey. Simmer for 8-1o minutes. Puree with a wand mixer. Then fold in cilantro.
- Once glaze is cooled toss pork chops with half of glaze and refrigerate overnight.
- Remove pork chops from cooler and let rest for 3-4 minutes at room temperature for a juicy chop.
- Cook pork chops on medium-high area of grill to an internal temperature of 145° brush with glaze while cooking to get a good caramelization.
- Remove from heat and rest for 1-2 minutes before serving for a juicy bite. Serve some of the sauce on the side.

- 1/4 cup Contigo® chipotle peppers, pureed
- 1/2 cup West Creek® Ketchup
- 2 tbsp vinegar, cider
- 2 tbsp West Creek® Sugar, Brown
- 2 tbsp Peak Fresh Produce® Cilantro
- 1 tbsp Peak Fresh Produce® Garlic, minced
- 4 tbsp West Creek® Honey
- 1 cup stout
- 1/4 tsp salt, sea
- 1/4 tsp Roma® Black Pepper, Ground
