Tilapia Tacos with Avocado Grapefruit Salsa

Directions

  1. Preheat the oven to 400°F and season the tilapia with lemon pepper seasoning. Bake the tilapia for 10-15 minutes, until the meat turns opaque and flakes easily with a fork.
  2. To assemble the tacos, top the tortillas with the desired amount of salsa, followed by about 1/2 tilapia fillet per tortilla.
  3. Drizzle each taco with the cilantro lime crema, and garnish with chopped cilantro and sliced green onion.

Ingredients

  • 2 7 to 9 oz. Empire's Treasure® Tilapia Filets
  • lemon pepper, seasoning
  • onion(s), green, sliced
  • 4 Corn Tortillas
  • Avocado Grapefruit Salsa, (see recipe below)
  • Cilantro Lime Crema, (see recipe below)

Cilantro Lime Crema

Directions

  1. Stir together the sour cream, lime juice and cilantro.
  2. Season with salt and pepper to taste.

Ingredients

  • 16 oz. sour cream
  • 1/2 cup cilantro, fresh, chopped
  • 1/4 cup lime juice, fresh squeezed
  • salt and pepper, to taste

Avocado Grapefruit Salsa

Directions

  1. Combine the grapefruit, avocado, jalapeno, onion, cilantro and lime juice, and season with salt and pepper to taste.

Ingredients

  • 1 grapefruit, diced
  • 1 avocado, diced
  • 1/2 jalapeño(s), seeded and minced
  • 3 tbsp onion(s), red, minced
  • 2 tbsp cilantro, fresh, minced
  • 1 tsbp lime juice, fresh squeezed
